Baked Potato Soup


Is it cold where you are? Here is something to warm your heart and soul…


  • 3 bacon strips, diced
  • 1 medium – large onion, chopped (depending on your preference, you can leave the peels on or remove them)
  • 5 stalks chopped celery
  • 2 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can green chiles
  • 2 cans chicken broth (small cans)
  • 4 large baked potatoes, peeled and cubed (bake @ 375 for 1 hour)
  • 1 – 1 1/2 cups milk
  • 2-3 Tbs sour cream
  • 1/2 teaspoon hot pepper sauce


In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Set bacon aside. Sautee onion. celery and garlic in the drippings (add butter, if needed) until tender. Stir in salt, and pepper; mix well. Gradually add broth. Heat on low – medium, but do not boil. Add the potatoes, milk bacon and chiles; stir in sour cream until smooth. Heat thoroughly, but do not boil. If desired, sprinkle shredded cheese when serving.
